Truth be told, I can be a little skeptical to try new foods. I’m typically the only person in a group of friends trying to decide on a restaurant that doesn’t include sushi. But as my husband reminds me, I’ve never actually tried sushi. I should probably have my dietitian license revoked because I not only dislike [the thought of] sushi, I don’t like the taste or smell of anything that swims. I can muscle down a tuna sandwich, but I’d really prefer not to. That’s not to say I will never feature a fish recipe, oh baby, they’re coming – I can’t deny the health benefits of those beauties . . . but I will rely on my fishy friends and family for taste approval.

My point to that dialogue? I was skeptical of avocado toast for a long time. Avocados in my self-proclaimed world-famous guacamole, avocados on my sandwich or in my famed BBQ chicken salad – I can get behind that. But avocados on toast with an egg? Puh-lease. Then I recently tried it and puh-lease give me more! Blake saw me with a plate of 2 avocado toast shortly after I tried it the first time and assumed one was for him. We all know what happens when you assume, right? Right. Suffice it to say he was hooked and we made another one for me and 2 more for him. Hooked, I tell ya.

The star player in terms of nutrition here is the avocado. So many health benefits! Where do I begin? It is one of the few fruits that contain fat. Most of its’ calories are from fat, but those fats are monounsaturated or what we often label as “heart
…they just taste d-freaking-vine; so, eat up, buttercup!

The last 3 ingredients are optional but delicious. Add a fried egg and/or a slice of Havarti cheese and/or a drizzle of balsamic glaze and prepare to have your taste buds blown away. My life will never be the same. And who knows, maybe I’ll be saying the same thing about sushi someday 🙂

Prepare to have your taste buds blown away!
